In 1976, I purchased a new cassette by Paul Harvey titled, ‘Our Lives, Our Fortunes, Our Scared Honor’. On it, the last cut was one called, ‘The Man And The Birds’. I was so moved by it, I sought to turn it into a visual, hoping to show it in churches at Christmas time. Over the last 40 years I‘ve never been able to find or shoot the footage to bring the story to the screen. It has been disheartening. Today, for the first time, I heard Paul Harvey deliver an 'Easter Story' and I thought….maybe this time? I started this project about 2PM on the day before Easter 2015. At 11 PM I was afraid I’d fail just like I had with ‘The Man And The Birds’. In all honesty, when I succeed, I always feel as if I’ve been helped. Helped by some unseen power who has placed elements in my path, elements I would never have found on my own. That seems true here. I have thousands of music pieces in my library, but auditioned only about 75 until I found the music which I sought first. The same is true with the visuals. So, now it is finished….and I can present….’An Easter Story’…on Easter.

Fair Rent (1947) It seems that I am "soft". When I reflect on what people around the world have gone through (both past and present) to live ...... I feel shameful at my lack of gratitude.


£100 in 1947 has the same "purchasing power" as £3,680.34 in 2017.

In Britain, the end of the war did not mean the end of rationing. This happened gradually between 1948 and 1954. After the war, the amount of produce available to buy actually fell. Bread was rationed in 1946 and potatoes in 1947, neither having been restricted during the war itself. Cookit Homepage

Mary Berry's perfect Victoria sandwich
The traditional Victoria sandwich is a baking classic and a tasty tea-time treat.
4 free-range eggs
225g/8oz caster sugar, plus a little extra for dusting the finished cake
225g/8oz baking spread, margarine or soft butter at room temperature, plus a little extra to grease the tins~To serve
good-quality strawberry or raspberry jam
whipped double cream (optional)

Method

  1. Preheat the oven to 180C/350F/Gas 4. Grease and line 2 x 20cm/8in sandwich tins. Use a piece of baking paper to rub a little baking spread or butter around the inside of the tins until the sides and base are lightly coated then line the bottom of the tins with a circle of baking paper.
  2. Break the eggs into a large mixing bowl, then add the sugar, flour, baking powder and baking spread. Mix everything together until well combined with an electric hand mixer (you can also use a wooden spoon) but be careful not to over mix. Put a damp cloth under your bowl when you’re mixing to stop it moving around. The finished mixture should fall off a spoon easily.
  3. Divide the mixture evenly between the tins: this doesn’t need to be exact, but you can weigh the filled tins if you want to check. Use a spatula to remove all of the mixture from the bowl and gently smooth the surface of the cakes.
  4. Place the tins on the middle shelf of the oven and bake for 25 minutes. Check the cakes after 20 minutes.
  5. The cakes are done when they’re golden-brown and coming away from the edge of the tins. Press them gently to check – they should be springy to the touch. Remove them from the oven and set aside to cool in their tins for five minutes. Then run a palette or rounded butter knife around the inside edge of the tin and carefully turn the cakes out onto a cooling rack.
  6. To take your cakes out of the tins without leaving a wire rack mark on the top, put the clean tea towel over the tin, put your hand onto the tea towel and turn the tin upside-down. The cake should come out onto your hand and the tea towel – then you can turn it from your hand onto the wire rack. Set aside to cool completely.
  7. To assemble the cake, place one cake upside down onto a plate and spread it with plenty of jam. If you want to, you can spread over whipped cream too. Top with the second cake, top-side up. Sprinkle over the caster sugar.

3-Layer Carrot Cake Made in the Microwave - Gemma's Bigger Bolder Baking

Ingredients
  • 2½ cups (121/2oz/355g) all-purpose flour
  • 1½ teaspoon baking soda
  • 1¼ teaspoon baking powder
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • 2 cups (18oz510g) sugar
  • 4 eggs, room temperature
  • 1 cup (8floz/225ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups (8oz/300g) peeled grated carrot
  • ¾ cup (33/4oz/106g) raisins
  • ¾ cup (21/4oz/64g)) shredded coconut
  • 1 cup (8oz/225g) pineapple, crushed and strained
  • 1 batch Best Ever Cream Cheese Frosting
Instructions
  1. Generously butter 3 9-inch microwave safe silicone cake molds.
  2. In a large bowl, combine the flour, baking soda, baking powder, cinnamon and salt, set aside.
  3. In another large mixing bowl combine sugar, eggs, oil and vanilla with a hand mixer. Mix until pale yellow and fluffy, about 4-5 minutes. You can also do this using a hand whisk.
  4. Using a whisk incorporate the dry ingredients into the wet mixture.
  5. Lastly fold in the grated carrot, raisins, coconut and pineapple.
  6. Divide the batter evenly between the 3 molds.
  7. Microwave each layer individually for roughly 3½- 4 minutes or until firm on top and there is no more wetness. This timing is based on my 1200 Watt microwave so check the wattage of your microwave because your timing may vary.
  8. Once each layer has been microwaved allow to cool for 3-5 minutes before turning out onto a cooling rack.
  9. Once the cake has completely cooled you can frost it with my Best Ever Cream Cheese Frosting.
  10. To assemble: Put your first layer of cake on your serving platter or cake stand. Using a large offset spatula spread a big dollop of the frosting evenly across the cake. Stack the next layer of cake on top of the frosted first layer and repeat the process until all 3 layers have been frosted.
  11. Next, apply a crumb coat or thin layer of frosting around the entire outside of the cake. Do not worry about this looking perfect as its meant to be rustic.
  12. Lastly, decorate the top of the cake. Fill a piping bag with the remaining frosting. Pipe dollops of frosting all across the top of the cake in a circular pattern working from the outside of the cake in. Lastly, decorate the top of the cake with white chocolate carrots.   13. Store at room temperature for up to 3 days.

Justin update and Isla Rose turns One Year Old~Give thanks to the Lord for He is good!


"It really is quite miraculous, your tumors have shrunk so much, you may not need surgery"

This is what Dr. Pomerantz (@Dana Farber) started the conversation with April 13th. 

"+scans look terrific"

"+tumor markers have normalized."

"+tumors in lungs and lymph nodes have shrunk"

+"Only one Lymph node in your back is 5mm"

+"tumor in center chest/lung is 1 1/2 cm"

+"Odds are in your favor the remaining lung 'tumor' is dead tissue"

+"re-occurrence is low, but there is a 2%-5% grow back"

+" 10% chance of Teratoma occurrence, (another type of cancer)"

+monitoring for 2 years, after 2 years your in the clear"

+"check up every 2 months with scans for 4 months"

P.S.
There is one tumor (it is 3 cm) the chemo could not reach. Justin does need to have surgery, (out patient) this coming May 5th with a Dr. Steel at Dana Farber. Pre-Op is this coming Thursday. It will be a 30 min. procedure once the surgeon starts. I will update any new information about his heart issue and hearing problems as information becomes available.
