They are made by a wonderful young man named Eric who live in Minnesota, (I think) with his wife and daughter on a lovely farm. Camping in Northern Maine, (NW Maine)

We were in the town of Eustis.
Eustis is a town in Franklin CountyMaineUnited States. The population was 618 at the 2010 census. Eustis, which includes the village of Stratton, is a popular recreation area.











This was our camp site, the tent was under huge pines trees.



I took this photo in the morning, before the sun was up. It was so peacful....Glory to God!

Aug 29~The Beheading of John the Baptist





Grasshopper Parfaits


If you are looking for an easy, throw-it-together-in-about-10-minutes-treat to celebrate the Solemnity of the Birth of St. John the Baptist (the only saint who gets to celebrate his birthday liturgically) then here is an idea for you. Grasshopper pies are refreshing in the summertime, but usually require chilling time. Grasshopper parfaits are ready to eat as soon as you like.

What you need:
instant chocolate pudding
milk
oreos
Andes Creme de Menthe baking bits
peppermint extract
green food coloring
whipped cream




Make the pudding according to package directions and set aside. Mix in 1/2 to 1 tsp. of peppermint extract.

Let your youngest child get all ninja-like on a bag of 15- 20 Oreos or just crush them yourself and mix with equal amount of Andes baking bits.

Add 8-10 drops of green food coloring to whipped cream. (I used Cool Whip because I needed to get it out of my freezer.)

Layer in a tall glass; pudding, whipped cream, and cookie mixture. Repeat. Chill, if you want to, or just serve!

Here are 2 of the several jars of Rose hip syrup I made
Rosa ~ I made Rose hip syrup with the fruits of the Rosa Rugosa. I used a WW2 recipe. The British people needed a source for vitamin C for the children during the war. Germany had cut off most of the shipping so fresh fruit was not available. They developed this recipe.

How we survived in a time of rationing 1939 – 1953
Syrup
For 2 pounds of hips:
Have ready 3 pints of boiling water, mince the hips in a coarse mincer, drop immediately into boiling water or if possible mince the hips directly into the boiling water and again bring to the boil. Stop heating and place aside for 15 minutes. Pour into a flannel or linen crash jelly bag and allow to drip until the bulk of the liquid has come through.
Return the residue to the saucepan, add 11/2 pints of boiling water, stir and allow to stand for 10 minutes. Pour back in to the jelly bag and allow to drip. To make sure all the sharp hairs are removed put back the first half cupful of liquid and allow to drip through again.
Put the mixed juice into a clean saucepan and boil down until the juice measures about 11/2 pints, then add llb. 4ozs of of sugar and boil for a further 5 minutes. Pour into hot sterile bottles and seal at once. If corks are used these should have been boiled for 15 minutes just previously and after insertion coated with melted paraffin wax.
It is advisable to use small bottles as the syrup will not keep for more than one week or two once the bottle is opened. Store in a dark cupboard.
The resulting syrup can be used as a flavouring for milk puddings, ice-cream or almost any sweet, or diluted as a drink.

Feasts of St. Monica and St. Augustine is Aug 26th~and a music video

Feasts of St. Monica and St. Augustine

Aug. 26th is the feast of St. Monica with the feast of her son, St. Augustine, following the day after. We aren't doing any formal geography this year, but a globe, some wall maps and Google Earth are going to help us explore the place of St. Monica's birth (Algeria) and the place she died (Ostia, Italy). I was looking for recipes that might be appropriate for celebrating St. Monica and her son when I came across this Algerian dish
It just so happened that last week, 
I decided to reintroduce a similar dish I hardly make any more because the children were 
never very fond of it. Now that they are older, I know I can coerce encourage them 
to give it a fair try. 
My recipe, bearing a striking resemblance to the Algerian version calls for zucchini, chicken, tomatoes and couscous but no chickpeas. 
I don't see why you couldn't add them if you wanted to.

Chicken and CousCous
2 pkg. boneless chicken thighs
2 zucchini, chopped into bite size pieces
1-2 cans Italian style tomatoes, undrained
olive oil
garlic salt and pepper
couscous (we love Near East Parmesan Couscous)

Season chicken thighs with garlic salt and pepper and brown in olive oil. Remove from pan. 
Saute zucchini in remaining oil and pan drippings. Add tomatoes 
(use two cans if you want more tomato in the tomato/zucchini ratio, I prefer more zucchini) 
and bring to a boil. Return chicken, cover and simmer until chicken is done. 
Serve over couscous.

As you can see, it isn't really a recipe, rather just a set of instructions. 
You can play with it and add seasonings that you know your family will like.
