The first fire of the season~even though it has been warmer than normal, a few nights have been cold~Winter is around the corner here in Maine!

Winter can be very long, cold and dark~ I do not feel ready, (mentally or physically). So I started walking 30 min 3x a week, and I started using a Seasonal Affective Disorder light...also know as S.A.D. It is something that happens in Northern climates. 
I have also had a major "pity party" with the LORD. I had begged Him to heal me, show me what I need to do to feel better, to answer all my prayers....especially about my hope and dreams...I have come to the conclusion that I am not a Saint, I do not like pain and suffering, I do not want it, (even though I "OFFER IT UP" )~pain and suffering stink.
I get very confused about pain and suffering as well as despair!
JESUS' death was perfect!
HIS DEATH IS perfect, there is not one thing I can do to add to what HE has already done....so why do I have such hopelessness?

Right now I am living day by day, one day at a time...I can not think about tomorrow, next week, my hopes or my dreams...they are gone...I can only think about today, right now.
I thank God for You, you give me hope, knowing you are out there, reading this, that you care, THANK-YOU!


Our son Jacob harvested the first deer from our land, ( I say "our" land, but it is turning out to be Tim's land and that too makes me incredibly sad, very very sorrowful). It is an 8 point buck which weighed 170 pound. It will be good organic meat for the winter. It is something to thank GOD for, and I do thank HIM!

I did manage to put a few Fall/Halloween decorations in front of the house.You are in my prayers, blessing upon you!

All I can manage is going to work and coming home....I can do small projects, but take my time, it is slow.

Blessing to you all....this is real life, (it's me) ~I share parts of my life with you...the good and bad....the truth is...

I have not been feeling well...
down in the dumps
depressed,
lack of faith,
lack of trust,
full of worries,
things seem to be falling apart,
not much hope!


My diverticulitis has flared up, the doctor has me on 2 ~500 mg each, of antibiotics.
And I am so tired, deep in my bones tired.
I am on my way to my regular Sunday night Holy Hour/ Adoration~ all I can give you is my prayers, (for the next week or so)....

Jude, also known as Judas Thaddaeus,[4] was one of the Twelve Apostles of Jesus. Saint Jude's attribute is a club. He is also often shown in icons with a flame around his head. This represents his presence at Pentecost, when he received the Holy Spirit with the other apostles. Another common attribute is Jude holding an image of Jesus Christ, known as the Image of Edessa. In some instances, he may be shown with a scroll or a book (the Epistle of Jude) or holding a carpenter's rule.

Canning Salsa~ I only grow slicing tomatoes and that makes a very watery salsa. I was very excited to find this recipe~enjoy!

The smaller jars are Salsa.....

I have canned a lot of this years garden produce. This salsa will taste even better on a cold, snowy,
winter night.



Preparing and Canning Salsa

Tomato/Tomato Paste Salsa

  • 3 quarts peeled, cored, chopped slicing tomatoes
  • 3 cups chopped onions
  • 6 jalapeño peppers, seeded, finely chopped
  • 4 long green chiles, seeded, chopped
  • 4 cloves garlic, finely chopped
  • 2 12-ounce cans tomato paste
  • 2 cups bottled lemon or lime juice
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 tablespoon ground cumin (optional)
  • 2 tablespoons oregano leaves (optional)
  • 1 teaspoon black pepper

Please read Using Boiling Water Canners before beginning. If this is your first time canning, it is recommended that you read Principles of Home Canning.
Procedure:
Caution: Wear plastic or rubber gloves and do not touch your face while handling or cutting hot peppers. If you do not wear gloves, wash hands thoroughly with soap and water before touching your face or eyes.
Preparing Peppers: The jalapeño peppers do not need to be peeled. The skin of long green chiles may be tough and can be removed by heating the peppers. Usually when peppers are finely chopped, they do not need to be peeled. If you choose to peel chiles, slit each pepper along the side to allow steam to escape. Peel using one of these two methods:
  • Oven or broiler method to blister skins - Place chiles in a hot oven (400°F) or broiler for 6 to 8 minutes until skins blister.
  • Range-top method to blister skins - Cover hot burner (either gas or electric) with heavy wire mesh. Place peppers on burner for several minutes until skins blister.
  • To peel, after blistering skins, place peppers in a pan and cover with a damp cloth. (This will make peeling the peppers easier.) Cool several minutes; slip off skins. Discard seeds and chop.
Hot Pack: Combine all ingredients in a large saucepan and heat, stirring frequently, until mixture boils. Reduce heat and simmer for 30 minutes, stirring occasionally. Ladle hot into clean, hot pint jars, leaving ½-inch headspace. Remove air bubbles and adjust headspace if needed. Wipe rims of jars with a dampened, clean paper towel; apply two-piece metal canning lids. Process in a boiling water canner according to the recommendations in Table 1.

IMPORTANT:
The only change you can safely make in this salsa recipe is to change the amount of spices and herbs. Do not alter the proportions of vegetables to acid and tomatoes because it might make the salsa unsafe. Do not substitute vinegar for the lemon juice.

~Canning Zucchini with Tomato. I use this often for a base in Soups or pour it over chicken and bake it. let me know if you have other ideas:) God's Blessings.

Tomatoes and Zucchini
(or Tomatoes and Okra)  

Procedure. Wash tomatoes and 4 pounds of okra or zucchini if making a 7 quart batch and 2.5 pounds if you are making a 9 pint batch. These ratios have been tested for safety and altering them is not recommended. Dip tomatoes in boiling water for 30 to 60 seconds or until skins split. Then dip in cold water, slip off skins, remove cores, and quarter. Trim stems from okra and slice into 1-inch pieces or leave whole. Slice or cube zucchini if used. Bring tomatoes to a boil and simmer 10 minutes. Add okra and zucchini and boil gently 5 minutes. Add 1 teaspoon salt to each quart, if desired. Fill jars with mixture, leaving 1-inch headspace. Adjust lids and process jars 
Variation: You may add four or five pearl onions or two onion slices to each jar.

The hardest part of this recipe is skinning the tomatoes. BUT, I found this tomato
strainer at a thrift store for only a couple of dollars. IT Worked great!
The seedless and skinless sauce come out the side chute.


I placed sliced tomato in the hopper, (skins and all) and press the tomatoes with my fingers 
and crank the handle.
The seeds and skins come out the front chute.



This is my first batch, I have made more since this was done:)

I made the "Easy Refrigerator Cucumber Salad" and am reposting it. Tim LOVES the recipe:)

Very colorful and so easy to make.


I made 3 jar of the Cucumber Salad and a loaf of Best Ever Banana Bread by Gemma at Bigger Bolder Baking. Very good day:) 







Best Ever Banana Bread

Ingredients
  • 1½ cups ( 71/2oz/ 225g) all purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoons salt
  • ⅔ cup (5oz/150g) sugar
  • ¾ cup (2¼oz/67g) rolled oats (preferably quick-cooking)
  • ¼ cup (2floz/60ml) flavorless oil (canola, vegetable, sunflower oil)
  • 2 large eggs
  • ⅓ cup (21/2floz/75ml) milk
  • 1½ teaspoons vanilla extract
  • 3 medium very ripe bananas
Instructions
  1. Preheat your oven to 350oF (180oC)
  2. Prepare a 9x5 loaf pan with parchment paper.
  3. In a medium bowl, combine your dry ingredients (flour, baking soda, baking powder, oats, sugar, cinnamon and salt)
  4. In a large bowl, combine your wet ingredients (eggs, milk, oil, vanilla and mashed bananas)
  5. Pour the dry ingredients into the bowl with the wet ingredients and mix by hand just until combined. Do not over mix as this can make the banana bread tough.
  6. Pour the banana bread batter into the pan and bake for 55 minutes or until a toothpick or cake-tester comes out clean. Enjoy!
  7. Store at room temperature wrapped in cling wrap for up to 3 days.





Apple Picking~Apple brownie recipe

Finnian and Hunter were playing "Hide-N-Seek" in the apple orchard.

Apple Brownies

"This was my Mom's recipe. Easy and quick to make. Apples and walnuts are packed into a cinnamon spiced blonde brownie. Always a hit when I bring it to parties. Very moist and great to make in the fall when apples are plentiful."

Ingredients

  • 1/2 cup butter, melted
  • 1 cup white sugar
  • 1 egg
  • 3 medium apples - peeled, cored and thinly sliced
  • 1/2 cup chopped walnuts
 
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
  2. In a large bowl, beat together the melted butter, sugar, and egg until fluffy. Fold in the apples and walnuts. In a separate bowl, sift together the flour, salt, baking powder, baking soda, and cinnamon. Stir the flour mixture into the wet mixture until just blended. Spread the batter evenly in the prepared baking dish.
  3. Bake 35 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean.
